Purity ⚡️ Power A beautiful look at the bottom of one of our Kyoto Kraut fermentation jars, at the end of culturing and right before being packed into retail jars. This white ring is perfectly normal and an indicator of healthy fermentation and an abundance of beneficial bacteria, over time you will notice this in our retail jars as well. We choose to ferment our vegetables with the same 25 strain probiotic that we culture our yogurts with. These cultures are introduced to the vegetables right as they are being packed into the glass vessels to ferment for 4-6 weeks. We never add probiotics after fermentation!
