Hear me out, every dish at the Thanksgiving table can’t be heavy and full of grease and fat. These honey garlic glazed carrots are the perfect side dish & are actually my favorite of all the sides I made in the “ Side Dish Diaries” series. The glaze is unctuous & balanced with notes of sweetness and spice. Pro tip: make sure you cook your carrots just enough so they still maintain that bit of crunch 🥕 Ingredients • 6 carrots, peeled and sliced on a bias • 2 tablespoons olive oil (use good-quality oil) • 1⁄4 cup honey • 2 garlic cloves, minced • 1 teaspoon paprika • 1 teaspoon cinnamon • 1⁄2 teaspoon cumin • 1⁄2 teaspoon salt • 1⁄4 teaspoon black pepper • Pinch of nutmeg Instructions 1. Preheat your oven to 400°F 2. Prepare a large baking sheet by lining it with parchment paper for easy cleanup. 3. In a bowl, combine the olive oil, honey, minced garlic, paprika, cinnamon, cumin, salt, black pepper, and a pinch of nutmeg. Stir well until the mixture forms a smooth glaze. 4. Add the carrots to the bowl and toss until they’re evenly coated with the honey-garlic mixture. Spread them out in a single layer on the baking sheet. 5. Roast for 25–30 minutes, flipping halfway through, until the carrots are tender with caramelized edges and the 6. glaze has thickened slightly. 6.
