Ոսպով Ապուր Armenian Lentil Soup. I took a simpler turn with this soup... Did you know that there’s a more traditional form of Armenian Lentil Soup made with lentil, apricots and sometimes walnuts? This version with just lentil onions and spices is my all time favorite. I will definitely be experimenting with apricots and lentil soon! Here’s the recipe for this lentil soup
1.5 cups lentil cooked in 4-6 cups water and salt
1 medium onion thinly diced and browned in oil (Inused avocado)
1 tablespoon tomato paste
1 tablespoon red pepper paste
Salt and black pepper to taste
1 tsp cumin
1 tsp Aleppo pepper
Juice of 1/2 a lemon
Cook low and slow for 1 hour.
Serve with preferred herbs (I used cilantro and red pepper)
