🔥Supreme Protein Bowl 🔥 Super simple, packed with flavour and...vegan! 😍 This is the premiere of sharing my favorite Meatless Monday dishes with full recipes, and here is a Monday a favourite I make every week this time of the year! ☺️ Easy to get ingredients, easy to make - and easy to clean up - important factors for me on a Monday 😎 Recipe by me 🌱 Serves 2 💚 ❤️ Ingredients: 2.dl quinoa 1 diced sweetpotato (roasted) 4 diced carrots (roasted) 6-8 diced asparagus (roasted) Canned chickpeas (sauteed) 1 bag spinach (sauteed) ❤️ Spices for roasted veggies: Onion powder (I used ramsløk here! Extra yum) salt pepper olive oil (3 large clunks) ❤️ Dressing: 3tbs olive oil 2 tbs balsamico 1 tbsp tahini 1 teaspoon dijon mustard 🚩 What to do: 1. Dice asparagus, sweetpotato and carrots into bite-size pieces, blend it with spice + olive oil and bake at 200C for 35 min at 200C (400f) or until potatoes are tender. 2. Cook the quinoa 3. Sauté the chickpeas with olive oil, salt and pepper in a pan for 10 minutes, then add the spinach and stirr until soft. 4. Mix the dressing ingredients together: a hack is to use an empty jam-jar! 5. Mix all cooked ingredients together, and really spend some extra seconds on blending it all together, time spent mixing makes it extra moist and gives it such a good texture! 💚 Eating less meat and more plants is the one thing we can all do that will truly impact our personal footprint in our everyday lives.
