Dashi Poached Wild Salmon ๐ŸŽ๐ŸŽ The biggest note I get about wild salmon is that itโ€™s dry and itโ€™s hard to cook. This is my foolproof to way make it that is easy and melts in your mouth! 2 filets wild salmon (I used coho here) 2 bunches baby bok choy Dashi: 4-6 cups water 4-5 dried shiitake mushrooms (can use shiitake stems) 1 bunch rinsed and scrubbed scallions 2 tbsp dried kombu (or 1 sheet) 1 inch ginger knob, thinly sliced 2-3 tbsp tamari Drizzle: 1 tbsp tamari 1 tsp toasted sesame oil Chili oil and chili crisp Sesame seeds Heat pot with water. Add dashi ingredients and bring to a boil then simmer and cover for about 30 min. Gently add salmon into the water until fully covered. Cover and poach for about 10 min. Then add bok Choy and cover again for another 2-3 min. Transfer salmon and bok Choy onto shallow bowl. Cover with more broth and top with tamari, sesame and chili oil. Enjoy!
