Introducing Simone, one of our bartenders! Our little pocket rocket pal has joined via a journey very familiar to many within the Lyan fam, with backgrounds and stints in Italy, Edinburgh and Melbourne. But Simone has the added benefit from having a heap of experience in other Lyan venues – working at Lyaness, but crucially to Seed Library, running the drinks side at Cub. He has a propensity for respectful flavour creation, careful and meaningful processing, and a want to really connect and understand the producer/grower’s perspective. All things Seed Library! Oh, and his (self imposed) nickname is “Bicep”. Lols and Love.
