Whoever came up with the idea to put zuchinni in bread was A GENIUS!! 🙌 It seriously is a game changer and keeps the bread soft and moist 🥰 It's also adds some more nutritional value without affecting the flavor! Win win! . You guys seriously have to make my Double Chocolate Espresso Zucchini bread recipe because it is to die for!! I brought it to work this week and it was all the hype with my coworkers 😁 I'm always happy to share the love haha 💖Hands down the BEST chocolate zucchini bread I've ever made!! Recipe details below 👇 . Ingredients: • 1 cup almond flour • 1/2 cup cassava or tapioca flour • 1/4 cup coconut flour • 1/2 cup cacao powder • 1/3 - 1/2 cup coconut sugar • 2 flax eggs(I used @bobsredmill egg replacer) • 1 cup shredded zucchini • 1 tsp baking soda • 4 tbsp instant coffee mixed with 4 tbsp warm water • 1 cup nut milk • 1 tbsp melted coconut oil or avocado oil • 1 tsp vanilla extract • 1 cup chocolate chips(I used @hukitchen baking gems) . Directions: 1) In a bowl, mix together the flours, cacao powder, coconut sugar, and baking soda. Then in a separate bowl whisk together the coffee, nut milk, vanilla extract, egg replacer, and oil. 2) Combine everything together and stir well. Incorporate 1/2 cup of your chocolate chips and shredded zuchinni(make sure you squeeze as much water out of the shredded zucchini as possible. I use a straining bag!) 3) Spray a loaf pan with some avocado oil and place parchment paper to fit inside. Pour bread batter into pan and top with the remaining chocolate chips. 4) Bake for 50-55 mins at 350 degrees. When bread is done baking let it cool completely before storing.
