Replying to @urfav_.eve the only two things i didnt add was cinnamon and raisins 😅 INGREDIENTS: • 2 lbs chicken • 3 bay leaves • 1 1⁄2 white onion • 1 tsp salt • 6 chiles de guajillo • 2 chiles de pasilla • 6 cookies or saltine crackers • 1⁄2 disc abuelita mexican chocolate • 1⁄3 sweet plantain • 1⁄4 cup almonds • 1⁄4 cup walnuts • 2 roma tomatoes • 2 tomatillos • 5 garlic cloves • 1⁄2 tbsp sesame seeds • 4-5 cloves • 8-10 black peppercorns • 1⁄4 tsp allspice DIRECTIONS: 1) Bring water to boil in a large pot and add chicken, bay leaves, 1 onion, and salt to taste. Cook chicken for 30-35 minutes then take chicken out and reserve the stock. 2) In a pan add oil and heat up the chiles until softened. Repeat this proces with the cookies, sweet plantain, almonds, and walnuts. 3) Roast the tomatoes, tomatillos, garlic, and onion. Then toast sesame seeds, black peppercorns, and cloves. 4) Add all the ingredients to a blender along with 1⁄4 tsp all spice and 7 cups of the chicken stock used to cook the chicken. Blend until smooth then add the liquid into a large pot through a strainer. Keep sifting through the liquid, then discard the leftover paste. 5) Throw in the abuelita chocolate to melt. Once the sauce has thickened add the chicken and cook let the sauce cook in the chicken about 10 minutes.
