Dreaming about these Cacao Matcha Protein Cups I made a while back šš They are seriously the perfect treat/snack packed with antioxidants, protein and healthy fats! They are dairy, grain, gluten and refined sugar free as well!!

Ingredients:

For the crust:
⢠1/2 cup coconut flour
⢠1/2 cup almond flour
⢠1/4 cup cacao powder
⢠2 tbsp maple syrup
⢠2 tbsp melted coconut oil
⢠1 tbsp nut milk
.
For the filling:
⢠1 cup macadamia coconut butter
⢠2-3 scoops vanilla protein powder(I used @ancientnutrition vanilla plant based)
⢠2 tsp matcha powder
⢠1-2 tbsp powdered monk fruit
⢠2 tbsp melted coconut oil
⢠1 tsp vanilla extract
⢠Chocolate chips(I used @evolvedchocolate)

Directions:
1) In a bowl, mix together all your crust Ingredients.
2) Spoon the crust mixture evenly into 11-12 muffin cups.
3) Add all your matcha filling ingredients into a bowl except for the chocolate chips. Mix together until everything in well incorporated.
4) Add a spoonful of filling into each muffin cup.
5) Top with some chocolate chips and then put the cups in the fridge for at least 30 mins to set.
6) Enjoy them throughout the week!
