So my roommate wanted me to make the carrot sticky toffee pudding I made last month but I forgot to buy dates and I have a bunch of apples so I made a upside down apple spiced carrot cake instead. I just followed a simple carrot cake recipe added some extra spices (cardamom, nutmeg & cloves) and applesauce to the batter. I poured some caramel that I had leftover from when I made the sticky toffee pudding into a pan, placed sliced apples on top of that, then batter and baked. It was very good with Van Leewan honeycomb ice cream 😋
