INGREDIENTS: • 1 Celery chopped • 1 onions diced • 1 carrot diced • 100g pancetta • 1 lb of beef • 150ml Red wine • 4 tbsp tomato paste w/ 2 tbsp stock or water • 2 cups beef stock • Parmesan cheese • 1 tsp black pepper • 1 tsp oregano (fresh sprig is best) • Salt to taste • Optional sprig of rosemary • 400g semolina flour • 4 eggs DIRECTIONS: 1) In a pan add chopped celery, onion, pancetta, and carrots with olive oil. Stir until veggies have softened. Throw in a sprig of rosemary then add in the beef. Season with oregano and black pepper. Sear it until the water has cooked out from the beef. 2) Add in the red wine, vegetable stock, and tomato paste mixture. When it starts bubbling set the heat on low and simmer for an hour. 3) For the pasta, gradually combine the semolina and eggs until it is well combined into a ball shape. Should be a bit dryer but not too dry. Knead for a few minutes then let the dough rest for 20 minutes. 4) After 20 minutes break your dough in 3 equal parts. Whatever dough is not being used, keep it covered so it doesn’t dry out. Lay out all purpose flour on a clean surface and start rolling out the dough. It needs to be thin enough to where you can see your hand through the other side. Keep your dough well floured so nothing sticks. Then fold up your dough and layer flour after each fold. Then cut into 1⁄4 in slices. Unfold the noodles and add more flour. Then boil for 5-7 minutes and strain. 5) In a new pan, add a serving of bolognese and a bit of pasta water. Add a serving of noodles into the pan and stir everything unti combined.
