So happy to be back in my kitchen cooking for my teen. Nothing gives me more satisfaction than controlling everything he eats (hence why I nursed for almost 2 years. Sorry for the TMI 😂 ). Since y’all request my 12 (or 24) hour bone broth recipe on the daily- here it is. Please keep in mind I am very ADD and undisciplined and I change things up depending on availability of meats/aromatics and herbs. 🤷🏻‍♀️ but lately this is what I’ve been doing ha ha. Start by 7am: 2-4 lbs marrow bones 2 lbs Ox tail 2 lbs short ribs Flash fry in 8 quarts+ soup pot with avocado oil. Fill with water and boil. Toss the first boil and rinse meat clean. Flash fry onions, garlic, ginger, bay leaf, peppercorns and herbs with cleansed meat for a minute, fill with water to about 7/8 full from top and boil again uncovered. Once boiled, turn down to lowest heat and add below, cover: 1/2 tbs apple cider vinegar (leeches marrow out of bones) 1 tsp cinnamon Fish sauce Soy sauce Honey (or rock sugar) Optional: Star anise 八角 Serve for dinner by 7pm: (Pictured) Udon (may be substituted for ramen or pho) Broccoli (bok choy or spinach is fine) Scallions Cilantro Salt and white pepper to taste Poached eggs optional So easy! I drink the broth in the AM, eat it with veggies and/or noodles/rice. Whatever you want. I don’t believe in rules in the kitchen. Do whatever you like! 24 hour version: (2 - 3 stock pots going at once) On broth nights i only sleep 6 hours. I turn off the heat by midnight (checking water levels regularly), leave the covers on! It’ll continue to simmer in its own heat. Upon waking @ 6am, i check water level, if it’s below 50% I add it back up to 3/4 level. Bring to a boil and then turn to lowest heat for about 2 hours.
