It has been about a year since our last full meal prep and we are back at it! After getting (mostly) settled in to our new home, classes and jobs are in full swing and meal preps like this ensure that we always have nourishing, delicious food ready to eat. As much as I love to cook, I love even more having time to do other household chores and relax in the evenings during the workweek. It also saves us from impulse takeout when we can’t be bothered to cook!
