HEALTHY FRIED ZUCCHINI BLOSSOMS šŸ˜®ā€šŸ’ØšŸ˜ You guys kept telling me to make these after I showed how many zucchini’s we were growing šŸ˜‚ so this was my first time and I kinda wish they made the cookbook because they were out of controlšŸ”„ Full recipe below, make sure to like and comment šŸ¤ ā € Serves 2-3 Ingredients: THE FILLING 10-12 zucchini blossoms 1 small pack of soft goat cheese 3 tbsp chopped green onion 3 tbsp finely chopped fresh parsley 1 tbsp minced garlic 1/2 tsp dried basil 1/2 tsp pink salt/sea salt Fresh ground pepper ā € COATING 1/4 cup brown rice flour Add tbsp by tbsp until you reach a slightly liquid consistency 1/2 tsp sea salt ā € 2-3 tbsp avocado oil to fry ā € Toppings: Flakey sea salt Chopped green onion Red chili flakes Thinly sliced jalapeño ā € Directions: remove stamens from each blossom and set aside. Mix the filling ingredients together then gently open up each blossom and spoon the mixture in or use your hands. twist to close and set aside. Make coating mixture by stirring together flour, water & salt. Cover each blossom in coating and set on a plate. Heat a large skillet on medium heat and add avocado oil. Use tongs to add blossoms one by one. Cover and let cook about 4-5 minutes, or until they become golden brown. Use a metal spatula to flip (be gentle because they may stick!). Flip and let cook another 4-6 min. Once completely golden, serve with flakey sea salt, green onion & option for red chili flakes & jalapeño #rachaelsgoodeats #healthyside #cookwithme
