I love Pitaya(pink dragon fruit) not only for its beautiful color but because it is an amazing superfood! Pitaya is rich in antioxidants like vitamin C, beta-carotene, and lycopene. This parfait is packed with fiber, protein and healthy fats!! It is also Paleo and Vegan friendly š I highly recommend making this fun and vibrant parfait before the summer ends because it is so uplifting and delicious šš Full recipe below š
Ingredients:
⢠1 cup pink dragon fruit
⢠1 and 1/2 cups almond or coconut milk
⢠2 cups plain dairy free yogurt
⢠3 scoops of vanilla protein powder
⢠1/2 cup chia seeds
⢠1 tsp blue spirulina powder
⢠2 kiwis š„
⢠1 cup chopped strawberries š
⢠1/2 cup grain free granola

Directions:
1) Blend together the dragon fruit, nut milk, and 1 scoop of vanilla protein powder. Pour into a container and mix in the chia seeds. Let it set for a few hours or overnight.
2) Mix together the yogurt, the remaining protein powder, and blue spirulina.
3) Cut one of your kiwis into thin round slices and carefully stick to the sides of 2 glass cups. Then divide your yogurt evenly into the bottom of both cups.
4) Next divide your pitaya chia protein pudding evenly between both cups.
5) Cut your other kiwi into small pieces. Top your chia pudding parfaits with the chopped strawberries, kiwis, and granola and enjoy! š
