Yo mob! I’m Ruben (@rubenzreubenz) and I run a little backyard smokehouse in Brixton called ‘Ruben’s Reubens’. I finished school and started delivering BBQ to hungry locals during lockdown, and have been here ever since. Here’s my speedy take on a deli classic, the REUBEN SANDWICH... Traditionally, a Reuben is made with salt beef brisket, but I’ve opted for the quicker and much more convenient... leftover roast chick! I have this sandwich to thank for getting me into cooking. It inspired the name ‘Ruben’s Reuben’s’ and sparked an obsession. This can be made with any bread really, as long as it’s sturdy and can be toasted till crispy and gold. Make extra russian dressing, it’ll keep in the fridge for a while and absolutely slaps in a burger. It’s worth making sure your chicken is seasoned properly to get that same level of saltiness as the classic ‘salt beef’. Full recipe for this one is on the @mob site.
