Seasoning the chicken and dressing with Tajín took this salad to a new level! 🚀 You’ll be craving this salad once you try it! #Tajinit #tajinfan Southwest Chicken Salad with Tajín-Lime Dressing Ingredients: Tajín-Marinated Chicken: 4 boneless, skinless chicken breasts 2 tbsp olive oil 2 tbsp Tajín Clásico Seasoning Juice of 1 lime 2 cloves garlic, minced Salt and pepper, to taste Salad: 6 cups mixed greens (arugula, baby spinach, romaine) 1 cup cherry tomatoes, halved 1 avocado, sliced 1/2 cup black beans, rinsed 1/2 cup corn kernels 1/2 cup red bell pepper, sliced 1/4 cup red onion, sliced 1/4 cup cilantro leaves 1/4 cup queso fresco, crumbled 1/4 cup roasted pumpkin seeds Tajín-Lime Dressing: 1/3 cup mayonnaise or Greek yogurt 1/4 cup sour cream or Mexican crema 3 tbsp lime juice 1 tbsp Tajín Clásico Seasoning 1 tbsp honey 1 clove garlic, minced 2 tbsp cilantro, chopped Salt and pepper, to taste Water to thin (optional) Instructions: Marinate Chicken: Combine olive oil, Tajín, lime juice, garlic, salt, and pepper in a bowl. Add chicken, coat well, and refrigerate 30 mins to 2 hours. Grill Chicken: Heat grill to medium-high. Grill chicken 6-7 mins each side, then rest and slice. Dressing: Whisk all dressing ingredients in a bowl. Adjust consistency with water if needed. Assemble Salad: Toss greens, tomatoes, avocado, beans, corn, bell pepper, onion, and cilantro in a large bowl. Top with chicken, queso fresco, and pumpkin seeds. Serve: Drizzle with dressing before serving.
