Happy Monday! In need for some lunch inspiration for this week? Try this high protein egg salad on toast recipe Ingredients: - 2 hard boiled eggs - 2 pieces bread (I love using sourdough, mine is GF @breadblok) - Coconut oil - Micro greens - 1/2 avocado Egg salad: - 2 hard boiled eggs - 2 tbsp greek yoghurt ( or veganaise works to) - Handful chopped fresh dill - 2 tbsp chopped capers - 1 tsp garlic powder - 1 tbsp Dijon mustard - 1/2 lemon squeeze - Salt & pepper to taste 1. Toast the bread with coconut oil 2. Add avocado spread with salt & pepper 3. Mix everything for the egg salad 4. Assemble and enjoy!
