This is one of my favorite weekday meals when you’re in a pinch: Collard Greens with Bacon and Cornbread. This meal reminds me of cozy nights with my family - there’s truly nothing better! And you know I had to add bacon for that crunch.
Ingredients:
Collard Greens:
-4 lb of collard greens
-1 lb bacon, cut into strips
-3 cups of chicken stock
-1 large onion
-2 teaspoon of kosher salt
-1 teaspoon of black pepper
-1/2 cup of apple cider vinegar
Cornbread:
-2 tablespoons bacon fat or unsalted dairy-free butter
-2 cups yellow fine cornmeal
-1 teaspoon kosher salt
-1/2 teaspoon baking soda
-1/2 teaspoon baking powder
-1 1/2 cups buttermilk
-1 large egg, lightly beaten
-1/4 cup honey or maple syrup
-1/4 cup vegetable oil
-1 cup shredded sharp cheddar cheese or dairy-free cheese
