Bacon Wrapped Smoked Salmon Bites Recipe • Create Brine: 1 cup brown sugar, 1 cup kosher salt, 1 tsp black pepper, 1⁄2 cup liquid aminos or soy sauce, 1 cup water, 2oz bourbon, 1 tbsp ginger paste, 3 cloves minced garlic • Cube 2-3 lbs of salmon and place in the brine and let it sit 12 hours overnight in the fridge. • Rinse salmon, and wrap half of a piece of bacon around it.
