Skin Healing Salad with lentils and roasted sweet potatoes 🧄🧅🥒🍠🥑 Follow @justinecooksvegan for more skin healthy recipes! Recipe: A few handfuls of mixed greens (I used an herb blend) 1/4 cup red onion, thinly sliced 1/3 cup cucumber, thinly sliced and salted 2 tbs dried cranberries 1/2 cup cooked lentils (I used Trader Joe’s packaged cooked lentils) 1 cup roasted sweet potatoes (recipe from a few posts back) Small handful of roasted cashews or hemp seeds 1/2 avocado, diced Garlic Tahini Dressing: 1-2 garlic cloves, minced 1 lemon, juiced 1 1/2 tbs tahini 2 tsp olive oil 1/4 tsp Celtic sea salt 1 tsp rosemary, minced 1 tsp- 1 tbs of water (if needed to thin it) Instructions: In a small bowl, combine all dressing ingredients and mix until well combined and smooth. In a large bowl combine lettuce, onion, cucumber, cashews, dried cranberries, avocado and drizzle on about half of the dressing and mix. Then plate and top with sweet potatoes and lentils. I heat the lentils up in a touch of water, as well as sweet potatoes I usually make a big batch beforehand and heat up on the stovetop or air fryer.
