Recipe – Fried Rockfish Sandwich
Ingredients:
• Rockfish fillets (1–2 per sandwich)
• Olive oil (for coating + frying)
• Fish seasoning (Old Bay or your favorite blend)
• Seasoned bread crumbs
• White sandwich bread (or bun)
• Tartar sauce
• Lettuce
• Tomato slices
Instructions:
1. Prep the fish: Pat your rockfish fillets dry, then lightly coat them with olive oil.
2. Season: Sprinkle fish seasoning evenly on both sides of each fillet.
3. Bread: Dredge the fillets in seasoned bread crumbs until fully coated.
4. Heat oil: Bring your oil to 350°F in a skillet or fryer.
5. Fry: Carefully place the fish in the oil and fry for 3–4 minutes per side, or until golden brown and crispy.
6. Rest: Remove and place on a paper towel-lined plate to drain excess oil.
7. Assemble: Spread tartar sauce on white bread, add lettuce, tomato, and your crispy rockfish fillet.
