These baked Banana Zucchini Bread Donuts are the perfect way to start off your morning! 😊 I love treats that are nutrient dense and consist of fruits and veggies! These donuts have such a dense and perfectly moist texture due to the banana and zucchini combo! They also have a delicious chocolate icing made from dairy/refined sugar free chocolate and coconut butter 🥰 They are Paleo and Vegan friendly as well! If you have some zucchini and very ripe Bananas laying around you should definitely makes these! 💕 Details below 👇 . Donut Ingredients: • 2/3 cup shredded zucchini • 2 ripe bananas mashed • 1 cup almond flour • 1/2 cup coconut flour • 2 tbsp tapioca flour • 1/3 cup coconut sugar • 2 eggs or flax eggs • 2/3 cup coconut milk • 1/2 tsp baking soda • 1 tsp apple cider vinager • 1 tsp vanilla • 1 tsp cinnamon . Chocolate glaze: • 1/2 cup coconut butter • 1/2 cup chocolate chips • Dye free sprinkles(I use @colorkitchenfoods) . Directions: 1) Mix the wet and dry ingredients for the donut batter separately then together. 2) Grease some silicone donut molds well with avocado or coconut oil. Pour donut batter unto a large ziplock bad and cut the tip of the corners off. Carefully fill each donut mold with the batter. 3) Bake them for about 30-35 mins at 350 degrees. Once they are done let them cool and stick them in the freezer for a couple hours while still in the mold. 4) Melt your chocolate chips and coconut butter together and pour into a small bowl. Take your donut out of the freezer and out of the mold. Carefully dip each donut in the chocolate glaze and place on a parchment paper lined baking sheet. 5) Add the sprinkles on top of each donut right after you dip them before the glaze sets.
