INGREDIENTS:
For the quinoa:
125 g Woolworths Red and White Quinoa Blend
Woolworths Salt and freshly ground black pepper to taste
2 t Woolworths Paprika
1 T Woolworths Italian Grind
2 T Woolworths Onion Flakes
2 Woolworths Free-range Eggs
1T Woolworths Chilli Crunch
4 Woolworths Free-range Chicken Breasts, halved through the middle and cut into large strips
Woolworths Extra Virgin Olive Oil spray, to coat the crumbed chicken
For the chunky guacamole:
2 Woolworths Ripe & Ready Avocados
Salt and freshly ground black pepper
1⁄2 lemon, juiced
90 g Woolworths Pickled Red Onion Petals
Woolworths Sliced Pickled Jalapeños, to garnish
Fresh coriander, to garnish
COOKING INSTRUCTIONS:
Add the quinoa to a pot and add enough water to cover by 3cm or using the ration 1 part quinoa to 2 parts water. Simmer for 30 minutes, straining off any excess water. Add your cooked quinoa to a large tray and spread it out to cool and dry as it steams.
Once cooled add the quinoa to a mixing bowl, along with salt and freshly ground black pepper to season, paprika, Italian grind seasoning and onion flakes, combine and set aside.
In a separate dish beat the eggs with the chilli crunch, this will be the glue that allows the quinoa to stick to the chicken.
Dip the chicken into the egg, coating both sides before adding to the quinoa. Using your tongs gently press down on the chicken to ensure the quinoa coats the chicken well before you turn it over and coat the other side in the same way. Repeat this process with the remaining chicken.
Lay the chicken strips in your air fryer, ensuring they don’t overlap, and lightly coat with a little olive oil spray. Cook at 200°C for 15 minutes or until the quinoa is crisp and the chicken is cooked.
While the chicken is cooking prepare the guacamole by removing the flesh of the avocado from the skin. Discard the stone. Cut the flesh into chunks and add to a serving bowl. Season with salt and freshly ground black pepper before squeezing over some lemon juice.
