Sweet and Spicy Wings Ingredients: For the Marinade: • 2 pounds chicken wings, split and tips removed • 2 tablespoons olive oil • 1 tablespoon soy sauce • 1 tablespoon lime juice • 2 cloves garlic, minced • 1 teaspoon ground ginger • 1 teaspoon smoked paprika • 1 teaspoon cayenne pepper • 1 teaspoon black lime • 1 teaspoon ground cumin • 1 teaspoon salt For the Glaze: • 1/4 cup honey • 1/4 cup Gochujang • 2 tablespoons Szechuan chili oil (to taste) • 2 tablespoons soy sauce • 2 tablespoons apple cider vinegar • 1 tablespoon brown sugar • 1 tablespoon butter • 1 teaspoon sesame oil • 1/2 teaspoon ground coriander • 1/2 teaspoon ground turmeric • 1/4 teaspoon sumac • 1/4 teaspoon cinnamon For the Garnish: • 1 tablespoon sesame seeds • Fresh parsley, chopped • Thinly sliced green onions • Lime wedges Instructions: 1. Marinate the Wings: • Combine olive oil, soy sauce, lime juice, garlic, ground ginger, smoked paprika, cayenne pepper, black lime, ground cumin, and salt in a large bowl. • Add the chicken wings and toss to coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight. 2. Prepare the Glaze: • Combine honey, Gochujang, Szechuan chili oil, soy sauce, apple cider vinegar, brown sugar, butter, and sesame oil in a small saucepan. • Add ground coriander, ground turmeric, sumac, and cinnamon. • Bring to a simmer over medium heat, stirring occasionally. Cook until the sauce thickens slightly, about 5-7 minutes. Remove from heat and set aside. 3. Cook the Wings: • Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. • Arrange the marinated wings on the wire rack in a single layer. Bake for 35-40 minutes, turning halfway through, until the wings are crispy and golden brown. 4. Glaze the Wings: • Remove the wings from the oven and place them in a large bowl. • Pour the prepared glaze over the wings and toss to coat evenly. • Return the glazed wings to the wire rack and bake for 5-7 minutes, until the glaze is sticky and caramelized. 5. Garnish and Serve: • Transfer the wings to a serving platter. • Garnish with sesame seeds, chopped fresh parsley , and thinly sliced green onions.
