These little birds come out extra juicy, smoky, and full of flavor every time. Perfect for the weekend cookout or game day grub.
Recipe:
Start by seasoning your Cornish hens with your favorite chicken rub, then let them marinate in a teriyaki honey mix. Fire up your PitBoss Phoenix pellet smoker to 350°F and get them on the grates for about an hour or some change.
While they’re cooking, spritz with a mix of apple juice and vinegar to keep them moist and baste with that leftover marinade for extra flavor.
Once they hit an internal temp of 170°F, pull them off, let them rest, and dig in — sweet, smoky, and fall-off-the-bone good! 😋🔥
