Veggie frittata you need to make š³
I made this last weekend for brunch when we had friends over and it was to die for. I will say, I donāt always focus on veggie dishes but a few of our guests pass on meat so I thought I would jazz this up with caramelized onions, zucchini, and plenty of goat cheese. It was decadent and took no time to prep.
INGREDIENTS:
⢠4 eggs
⢠2 zucchini, sliced
⢠1/4 red onion, sliced
⢠1 tbsp balsamic vinegar
⢠1/4 cup milk
⢠handful of thyme
⢠small log of goat cheese
⢠EVOO
DIRECTIONS:
⢠Preheat oven to 325°
⢠Slice your zucchini and onion thinly
⢠Add EVOO to your pan and sauteĢ red onion, after a few minutes add balsamic. Remove and add to baking dish.
⢠Add EVOO and sauteĢ zucchini till browned, remove and add to baking dish.
⢠In a bowl, whisk together the eggs, milk (I like full fat), thyme, salt and pepper and then pour over veggies.
⢠Crumble goat cheese lovingly!
⢠Bake for 30 minutes and serve!
