Move over burgers and hot dogs as our Pomegranate Glazed Chicken with California Walnut and Pomegranate Couscous is a sure-fire winner at BBQs! Ingredients For the chicken: ๐Ÿ”ธ 1 large clove of garlic minced ๐Ÿ”ธ 1 tbsp sumac ๐Ÿ”ธ 1 tbsp olive oil ๐Ÿ”ธ A pinch of salt and pepper ๐Ÿ”ธ 4 chicken thighs bone in and skin on ๐Ÿ”ธ 60 ml pomegranate molasses For the couscous: ๐Ÿ”ธ 160 g couscous ๐Ÿ”ธ 30 ml extra virgin olive oil ๐Ÿ”ธ 20 ml lemon juice ๐Ÿ”ธ 10 ml pomegranate molasses ๐Ÿ”ธ Seeds from half a pomegranate ๐Ÿ”ธ Small bunch of flat leaf parsley roughly chopped ๐Ÿ”ธ Small bunch of mint roughly chopped ๐Ÿ”ธ 80 g California walnuts toasted and roughly chopped Instructions ๐Ÿ”ธ Mix together the garlic, sumac and olive oil, season with the salt and pepper and massage into the chicken thighs. Leave to marinate for at least 1 hour. ๐Ÿ”ธ Once marinated, place the chicken thighs on a barbeque over medium hot coals. ๐Ÿ”ธ After 10 minutes brush the chicken with the pomegranate molasses โ€“ continue cooking until sticky and glazed on the outside and cooked right through on the inside. (If youโ€™re unsure you can pierce the chicken with a skewer โ€“ if the juices are pink keep cooking the chicken until they run clear). ๐Ÿ”ธ Cook the couscous as per the packet instructions. Meanwhile, whisk together the extra virgin olive oil, lemon juice and pomegranate molasses. ๐Ÿ”ธ Mix into the couscous along with the pomegranate seeds, fresh herbs and walnuts.
