Apple, Ricotta and Butternut Squash Crostinis -10oz bag chopped butternut squash -1 red apple, diced -1 French baguette, sliced -Bertolli Cooking Olive Oil -3/4 cup ricotta cheese -4-6 sprigs fresh thyme -1 tsp brown sugar Seasonings: salt, black pepper, Italian season 1⁄2 cinnamon, 1⁄2 tsp garlic powder, 1⁄4 tsp all spice, 1⁄4 tsp ground cloves -Add squash, apple, 2 TBS olive oil, 1⁄2 tsp salt, 1⁄2 tsp pepper, cinnamon, allspice, ground cloves and brown sugar to a bowl. Toss until well combined. -Pour mixture onto a nonstick baking sheet topped with fresh thyme, and bake at 425° for 20 minutes. Set aside -Use a brush to coat the sliced bread with olive oil and sprinkle Italian season on the slices. -Bake at 350° for 5 minutes Combine ricotta cheese, 1⁄2 tsp salt, 1⁄2 tsp pepper, and garlic powder in a small bowl and mix together. -Spread ricotta mixture evenly over slices.
