Sticky rice with palm sugar (wajik) is a traditional snack made with steamed glutinous rice and cook in palm sugar and coconut milk. It’s a simple and delicious dessert that make with only 6 ingredients and most importantly vegan friendly, dairy free & completely gluten free too. Palm sugar sticky rice cake Ingredients for steaming: 300g glutinous rice, soaked 180ml water 2 pandan leaves Cook ingredients: 200 ml coconut milk 150g palm sugar 2 pandan leaves 1/2 tsp salt Method: 1.) Wash and soak the glutinous rice for about 2-3 hours. 2.) Drain and transfer the soaked glutinous rice to the cake tin or heatproof bowl. Add in 180ml water and pandan leaves. Steam for about 1 hour. (Discard the screwpine leafs after steamed) 3.) Mix together the palm sugar, screwpine leafs, salt and coconut milk in a pot. Cook the sugar with low heat until the palm sugar is dissolves. (Discard the screwpine leafs) 4.) Add in the steamed glutinous rice into the palm sugar mixture. Cook until the palm sugar is fully absorbed into the glutinous rice. 5.) Remove from the heat and transfer into to the prepared tray lined with banana leave. 6.) Spread evenly and press down with spatula to compact the rice. Let it cool completely for about 3-4 hours. 7.)
