Gluten and dairy-free, these bars are bursting with minty, chocolatey holiday goodness in every last bite. Save the recipe below ⬇
Ingredients:
Base
1 c pitted medjool dates
3/4 c walnuts (or other nut)
1/4 c coconut, shredded
1/4 c cacao powder
Pinch of sea salt
2-3 tbsp water, as needed
Filling
1/2 c raw cashews, soaked in hot water for 20 mins
1 c coconut cream
1/4 c honey or maple syrup
Pinch of sea salt
1 tsp mint extract
Topping
2 Hu Crunchy Mint Dark Chocolate bars
Directions:
〰️ Add all of the base ingredients to a food processor, processing until a sticky dough forms (you may need to add in a tbsp or two of water to help move things along)
〰️ Press into the bottom of a lined 8x8 baking dish
〰️ Add the filling ingredients to a high powered blender, blending until smooth — taste, and adjust
as needed
〰️ Pour the filling over the base and place the pan in the freezer for an hour or two to firm up
〰️ Once the filling layer is firm, melt the chocolate until smooth, pour it over the top, tilting the
pan to spread it evenly
〰️ Place back in the freezer for 2 hours before cutting into bars
〰️ Let thaw 5-10 mins before eating for the best texture
