Cook 3 lbs fresh tomatoes with a whole onion, celery, and carrot (lid on 10 mins) π
Uncover and boil another 10β15 mins, stirring until thickened π
Lower heat, add chopped basil + olive oil Simmer until sauce forms little bubbling craters (pioppiotta) π
Remove veggies, let it cool Pass through a food mill to pureΜe & remove skins/seeds π
Finish with olive oil, a pinch of sugar, salt & pepper π
