A few years ago, restaurants started sprouting up in Portland like toadstools, with names like Mr. Beast Burger, Sticky Wings and Man vs. Fries. None of these places really existed—at least, not in the way people usually think of restaurants. They were “ghost kitchens,” operating out of trailers scattered in parking lots across the city.
A Miami company had what looked like a can’t-miss idea for Portland’s fast-food and real-estate markets. But something went wrong.
