Sheet Pan Confetti Pancake Bars ❤️🥞 1 package Miss Jones Confetti Pop pancake mix 1.5 cups almond milk 2 eggs or flax eggs Extra confetti sprinkles of choice Cool whip for topping (or dairy-free coconut whip) Maple syrup for topping Directions 1. Preheat oven to 350 degrees Fahrenheit. Line an 8x8 baking pan with parchment and set aside. 2. Whisk together the almond milk and eggs in a large bowl. Stir in the pancake mix until just combined. Fold in a few tablespoons of extra sprinkles. 3. Pour batter evenly into baking pan and bake for about 15-17 minutes until just set. Careful not to overbake. 4. Once done, slice into 8 large rectangular bars. Top with cool whip and maple syrup and enjoy! Note: This makes a great meal prep breakfast to enjoy throughout the week.
