Fasting soup!! Here at @buchingerwilhelmi clinic, fasting doesn’t mean water-only (thank goodness) and their team of doctors have, over many generations, refined the best way to rest the digestive system and trigger the process of autophagy (where the body cleanses itself of damaged cells). At the heart is this fab veggie broth, the ultimate ‘fasting soup’ which I’m having twice a day here (alongside herb tea and honey for breakfast).
I thought you might like the recipe! I will certainly be saving this one to my IG collection too as I intend to have a soup-only day a few times each month now. How about you?
Fasting Broth (makes 1 litre)
Ingredients:
100g leeks
170g carrots
70g tomatoes
70g potatoes
30g onions
5g salt
Juice of 1 lemon
Method:
Peel and chop the vegetables, adding 1 litre of filtered water and cover with a lid. Boil until soft. Then remove about 2/3 of the vegetables. The remaining third is pureed until creamy and passed through a sieve to ensure the soup is completely smooth, with no lumps to digest. Add the lemon juice and salt to taste. You can also add a tsp of finely chopped fresh herbs for flavour also. Save the remaining cooked vegetables for an eating day and add to other soups and sauces.
