Seems like there's a million different ways that we cook chicken over fire around the globe, so over the next few weeks I'm gonna be sharing some of my favourite recipes with you, inspired by places and people. Kicking off with one I heard about only recently when I met @akwasibmensa and he told me about Ghanaian Shito sauce (thanks bro, I love it been eating it on toast!).Shito is rich, firey condement that packs a whole load of flavour and has a unique flavour that comes from the prawn or crayfish powder, and sometimes dried fish used in the recipe. He told me that it's made a bit differently by everyone, but it's only ever any good if you make it yourself... So I had a go, and this is my version. To make you will need:For the Shito -150ml Rapeseed oil4 small onions chopped5 cloves garlic chopped1 thumb ginger chopped2 scotch bonnets chopped 1 tspn ground cloves1 tspn chilli powder1 tspn ground corriander1 tbsp salt2 tbsp ground prawn powderJuice of one lemonFor the chicken -1 kg thighs1 tbsp rice flour1 tspn Allspice1 tspn paprika1 tbsp ground Corriander1 tspn white pepper 1 tbsp salt1 lemon to garnish Enjoy#bbqchicken #shito #ghana #worldfoods #global #spicy #firefood #recipe #chicken #african #ghanaian #fyp
