This Vegan unagi don are made of eggplant that simmer with sweet and sticky sauce. It is an easy plant based recipe that can be enjoy along with rice and most importantly can be prepare in just 30 minutes!
Recipe:
1 eggplant
Unagi sauce:
1/4 tsp dark soy sauce
1 1/2 tbsp soy sauce
1 tbsp vegetarian oyster sauce
1 tbsp sugar
3 tbsp water
To serve:
White rice
Toasted sesame seeds
Chopped scallions
Method:
1.) Trim off the eggplant top, then cut into half.
2.) Steam over medium heat for 18 minutes.
3.) Cut the steamed eggplant into half and then make another slit on the right and left. Be careful not cut through the skin.
4.) Mix together all the unagi sauce ingredients. Set aside
5.) Pan fry the eggplant on both sides until golden brown. Then pour the sauce mixture over the eggplant.
6.) Simmer over low heat until the sauce is thicken and reduced to half.
7.) Serve the vegan unagi with a bowl of white rice and sprinkle with toasted sesame seeds and chopped scallions.
