Mussels with creamy tomato sauce and parsley. Easy and impressive so a good one to make if you’re having friends or family found in the next few weeks! Mussels are also one of the most sustainable types of seafood you can eat, they don’t require chemical inputs and therefore produce v little greenhouse gases. Make sure you clean them and check they’re they’re closed and therefore alive before cooking them. I double wash mine in cold water too and double check they’re all closed before cooking them. One of my favourite things to eat in restaurants before I learnt to cook them at home and realised how easy and affordable they are. Perfectly served with a slice of bread for dunking into the sauce.
