Since I'm here, Episode 2 of this series had to be a Croatian inspired recipe. Before I arrived I googled 'Croatian BBQ chicken' and nearly every recipe that came up was a simple marinade of lemon, quality olive oil, herbs, salt and pepper.When I got here, I quickly understood why, as sourcing ingredients is challenging and they make use of what's in season and available generally. Where we are the nearest shop is 10km away, and fresh ingredients are only delivered on Monday, weds and Friday and are quickly bought up by the locals! So, this is what I came up with after grabbing the last chicken when I rolled in at midday, and foraged the rest from in and around the garden of our villa. This is definitely the kinda food I wanna eat on holiday though, and sometimes simple is best!
