In fatto di pane, la Lombardia è ricca di tradizioni e varianti: dalla pianura alle valli, quasi ogni zona ha un suo pane tipico. Nel Novecento, la tradizionale michetta è diventata il pane più popolare di Milano e ormai si trova fragrante sia nei forni più tradizionali che nelle panetterie più alla moda. Alla metropoli si lega la tradizione del “pan tranvai”, arricchito con uvetta destinato un tempo al consumo in tram durante i lunghi tragitti che portavano gli operai al lavoro. Scendendo più a sud, in Oltrepò Pavese, il re dei pani è certamente il miccone, mentre nelle campagne cremonesi e mantovane sono diffuse le varietà di Panon e Viadana. Più a nord, non mancano le varietà di pani dolci, come il Pane dei Morti, amatissimo nel bresciano, e la classica Spongada Camuna, una deliziosa focaccia dolce.
