šŸ‹Creamy Lemon Pasta - GF, Vegan •4oz your fave pasta (about 1/2 a package). I used @eatbanza linguine for a gf option. •1 clove of garlic, chopped or grated •Juice and zest of 1 lemon •3 Tbsp olive oil •1/4 cup plant-based milk, unsweetened (I used @oatly) •1 ladle of pasta cooking water •1 heaping Tbsp nutritional yeast •Lots of sea salt and black pepper to taste •Top with a handful arugula and more black pepper Cook pasta in boiling water, until al dente. I like to take mine out about 2-3 mins before it would be considered ā€œdoneā€. Meanwhile, in a large sauté pan over medium/low heat, add garlic, lemon juice & zest, olive oil, salt & pepper. Let simmer gently. Season with plenty of salt & pepper. Stir in milk and add a large ladle of pasta water. Stir. Immediately add in cooked pasta and toss to combine. Stir in nutritional yeast, and season further with pepper. Plate and top with arugula & even more pepper! Makes enough for 2 big bowlfuls.
