Gula Jawa is an an unrefined coconut palm sugar made by collecting the sap from the flowers of a coconut palm tree. It’s boiled down into a thick syrup and then poured into bamboo tubes to crystallize into solid blocks. It’s an exotic ingredient commonly found in Indonesian desserts.
