Jerk chicken is widely renowned as the signature dish of Jamaica, and whilst there are loads of versions, there are a few key ingredients that give it some identity, but whatever your recipe it MUST be cooked over fire. Allspice, thyme, black pepper, nutmeg and cloves are all key spices, and of course scotch bonnet chillies bring the heat and unmistakable flavour. Living in Shropshire its not always easy to get hold of scotch bonnets, but over the years I have discovered that Encona hotsauce (available in all supermarkets) makes a really good, consistent substitute, bringing the flavour profile but also it allows you to tweak the recipe until the heat is just right for you, where as scotch bonnets can vary massively so its now my go to method of bringing the scotch bonnet flavour. The honey glaze and lime are by no means traditional, they are my own additions but they work, trust me. These wings are perfect to marinade and then cook out and about, like I did on the bank this week. Just make sure you keep them cool so they stay safe to eat (thanks @dometic for the cooler).
