CARROT CAKE LOVERS & those of you who aren’t as well- promise me you’ll give these a try! 😍🥕 Carrot cake banana bread: - 2 overripe bananas - 2 egg - 1/2 c coconut oil (melted) - 2 T- 1/4 c maple syrup - 1 tsp vanilla - 1 1/2c gf flour (I used @bobsredmill) - you could use regular or try oat flour as well - 1 tsp baking soda - 1 tsp cinnamon - 1/2 tsp salt - 1/2 tsp nutmeg - 1/4 tsp ground ginger - 1 c grated carrots - 1/2 c chopped walnuts - 1/2 c raisins Frosting - 1/2 c @cocojune_organic yogurt - 1 scoop vanilla protein powder - 1-2 T maple syrup - almond milk to thin if needed Preheat oven to 350F and coat loaf pan nonstick spray or parchment paper. - In a bowl, whisk together mashed bananas and eggs. Add in the other wet ingredients. - In a separate bowl, stir together flour, baking soda, salt, cinnamon, nutmeg. Add dry ingredients into wet and stir until fully combined. - Add in grated carrots, nuts, and raisins. - Pour into prepared tins and bake in oven for 35-40 minutes or until toothpick comes out clean. - While baking, whisk together ingredients for the frosting. Let the loaf cool and then decorate! protein balls: - 1/2 c oats @bobsredmill - ��1/3 c almond or cashew butter - ��1 scoop @truvani chai protein powder (code MSD) (if using vanilla - add 1/4 tsp ginger and 1/4 tsp nutmeg) - ��1/2 tsp cinnamon - ��2-3 soaked soft dates (or 2 T liquid sweetener) - ��1/2 c grated carrots - ��1/4 c shredded coconut - ��1/4 c raisins - ��chopped walnuts pancakes: - 1/2 c birch benders paleo mix - 1/2 scoop chai protein - 1 egg - 1/4 c milk - 1/4 c shredded carrots - cinnamon - raisins and walnuts - toppings of choice SAVE FOR INSPO #carrotcake #healthyrecipes #healthydessert #bananabread #lowsugar #glutenfree #dairyfree #healthycarrotcake #proteinballs #healthysnack #recipeinspo
