Happy Spring🌸Meet Azibo 2022
AZIBO is the 2nd cider in our #senseofplace series and 2025 Spring Release. She hails from an ancient orchard in the heart of Russian River Valley at beyond organic and Afro-Indigenous stewarded, EARTHSeed Farm in Sonoma County. Amongst the towering 50+ year old Asian pear and persimmon trees, ancient redwoods, wildflowers, a plethora of botanicals, wise chill hogs, serene wildlife and herbs, grows 80-100 year old dry-farmed apple trees ranging from Jonathan, Kingston Black, Gravenstein, Wickson to some mystery apples.
AZIBO is a dry still fine apple wine (or cider) made with a field blend of those apples including Akane and Slippery Cider hand-harvested in 2022, fermented dry and barrel-aged in neutral French oak for over two years. She truly drinks like a dry age-worthy white wine, not ice cold. Best enjoyed slightly chilled. She’s complex, aromatic, earthy rich, herbal, floral with elegantly smooth tannins. She truly takes you on a serene palate journey personifying sense of place at EARTHSeed. One of our favorites, Sherehe!, also originates from the same orchard, so I know you will love her💛💕
