Simple wedge salad with creamy lemon garlic dressing. This was a riff on the wedge recipe in @mollybaz “Cook This Book” with what I had in the kitchen. The dressing was surprisingly easy, but so delicious. Creamy, but with just the right amount of garlic and lemon to brighten it all up. Finished with garlic toasted panko, fresh lemon juice, and parm. Dressing was Mayo, Dijon, olive oil, lemon juice, a splash of white balsamic, grated fresh garlic, and enough half and half to thin it to a dressing consistency. I just eyeballed it but more Mayo than everything else and just adjust the rest to your preference! Taste and season with some salt if needed and a shit ton on black pepper. To assemble: cut iceberg lettuce wedges and lightly dress with fresh lemon juice and olive oil. Top with creamy dressing, panko, and freshly grated parm.
