the best gluten free banana muffins 🍌
For muffin batter -
3 ripe bananas
2 eggs
1 cup brown sugar
1/2 c olive oil
1/2 c almond milk
2 1/3 cup gluten free 1x1 flour
2 t baking powder
1/4 t baking soda
1/4 t salt
2 t vanilla
1 T cinnamon
for crumble topping -
3 T soften butter
1/4 granulated sugar
2 T brown sugar
1/3 c gluten free flour
2 T oats
1/2 T cinnamon
1/2 t salt
bake 425 for first 12 mins, then bake 350 for 14 mins
Preheat your oven to 425.
For the topping:
Whisk soften butter & both sugars. Once combined mix in flour, oats, cinnamon & salt. Set aside.
For muffin batter:
Whisk eggs, milk & vanilla until fully combined. In a separate bowl, mash bananas, then add bananas, oil, & brown sugar to liquid mixture. In a small bowl, sift flour, baking powder, baking soda, salt & cinnamon. Fold dry mixture into wet ingredients until combined.
Fill your muffin tins 80% of the way full, then take a large spoonful of your topping mixture and press into the top of each muffin.
Bake at 425 for 13 mins, then turn the temperature down to 360 for 10 minutes.
Take out to cool & enjoy!
