COZY SANDWICH SERIES 🥪 episode 11! caprese sandwich is what we’re making 🤌🏽 another HIGHLY requested sammich. and like i said in the vid, i do not like dry ass sandwiches. this one has calabrian chili paste, fresh pesto, olive oil, balsamic glaze and juicy heirloom tomatoes. melty mozzarella gives a nice warm/cold contrast. here’s the full recipe: Pesto: 1 cup fresh basil leaves 2 garlic cloves 1/2 cup freshly grated Parmesan-Reggiano 1/2 cup extra-virgin olive oil 1/4 cup pine nuts Kosher salt Freshly ground black pepper Sandwich: Foccacia or bread of choice 1 tablespoon of unsalted or salted butter Calabrian chili paste 3 ounces fresh mozzarella Heirloom tomatoes, sliced Balsamic glaze Fresh basil leaves To make the pesto: In a food processor, add the basil leaves, garlic cloves, Parmesan, olive oil, pine nuts and a few pinches of salt and pepper. Blend until smooth and processed, scraping down the sides as needed. Adjust the salt to your liking. To assemble the sandwich: Preheat your oven to 350F. Toast the sliced foccacia, cut side down in butter in a pan. Add calabrian chili paste to one side, top with a few slices of mozzarella. Transfer to the oven until cheese has melted, about 5 minutes. Torch to get crispy, this is very optional. Top with slices of tomato, a drizzle of balsamic glaze, olive oil and black pepper. Top with fresh basil leaves. Add pesto to the opposite side of bread and then slice and enjoy.
