Sugar Cookie Bars🎅🏼🎄
Chewy perfection!! I like slightly underbaking them for an even chewier texture, but you can bake them for longer if you’d like!
Ingredients:
• 2 sticks SOFTENED butter (1 cup)
• 1 3/4 cup sugar
• 2 eggs + 1 egg yolk (room temp)
• 1 1/2 tsp vanilla
• 1/2 tsp almond extract
• 3 cups flour
• 3/4 tsp baking powder
• 1 1/2 tsp cornstarch
Frosting:
• 1 stick (1/2 cup) SOFTENED butter
• 4 oz (half a block) softened cream cheese
• 1 1/2 cups powdered sugar
• dash of vanilla
• dash of milk
• sprinkles!!
Start by preheating your oven to 350°F.
In a stand mixer, or with an electrical hand mixer, cream together your butter and sugar on medium speed. This takes 2-3 minutes. Scrape down the sides halfway through.
Add in your eggs, egg yolk, vanilla, and almond extract and mix until just combined. Don’t overmix.
In a medium sized bowl mix together your flour, baking powder, and cornstarch.
Pour your flour into the wet mixture in 2 separate parts, mixing each time in between. Scrape down the sides if needed. Don’t over mix!
Line a 9 x 13 cake pan with parchment paper. If you don’t know how, look up a tutorial. I’m not very good at it😂 Scoop the thick cake batter into the pan and press it down/spread it out with your hand.
Bake for 20-23 minutes depending on your oven. The edges will be slightly browned. Don’t over bake. Or they will be dry! Let them cool before adding on the frosting.
Make your frosting by beating together the butter and cream cheese. Then add 1 cup powdered sugar, then mix. Once combined add the other 1/2 cup and mix till combined. Add your vanilla extract. I like to add a dash of milk to thin out the frosting a little bit.
Cut the edges off once it has cooled, and spread on the frosting. Add the sprinkles. Cut into small squares.
