If you like a sweet snack in the summer time, these Strawberry Shortcake Rice Krispies are perfect! They are simple to make, but with a fun summer twist! 6 cups Rice Krispies cereal 12 oz bag of marshmallows 4 tbsp unsalted butter 1c freeze dried strawberries *I didn’t use a specific amount really, just as much as I wanted 😊* 2.5 bags of Ghirardelli white chocolate wafer melts Angel food cake globs 😇 (skip this step if you want to make the recipe GF!) Grease your baking pan and set aside. In a large microwave safe bowl, add butter & marshmallows. Microwave for about 60 seconds and then check. If the marshmallows have puffed up and butter has melted, take it out and stir. Pour in the Rice Krispies and mix. Next, crumble in freeze-dried strawberries and the crumbled globs of angel food cake. Mix well and pour into pan. In another bowl, microwave the white chocolate wafer melts in 60 second increments. Mix between each melt. Keep doing this until all of the chocolate has melted. Set aside for a few minutes to cool down. Once the chocolate mixture has cooled a little, add a small amount of red food coloring until you get your desired pink color. Pour over the rice Krispy treats. In a second, smaller bowl, add the remaining half bag of the white chocolate wafers and repeat the process. Set aside for a few minutes to cool down. After the pink chocolate has been poured, get an icing tool and dip it in the white chocolate and drag around the pink to make whatever design you want. I chose to make it pink marble, but there’s so many choices! Place the whole pan in the fridge and let cool for at least 30 minutes to completely set.
